Dinner for one

Hello all! I hope all of you are having a great day, and starting to settle down and enjoy time with family/friends. I wanted to share my dinner that I had yesterday. I got tired of eating chicken and jumped on a fish kick. I made lemon pepper salmon with onions, roasted potatoes with a little bit of salt, pepper, and Italian seasoning, along with red beans and rice. I sauteed the salmon with butter and lemon pepper seasoning along with a squeeze of fresh lemon and then let it cook on low heat with the onions. I cut the potatoes up and drizzled olive oil on them so that they would be crunchy on the outside and soft on the inside. I then made the red beans and rice lastly. The pictures below are during the process and the final product. It was the perfect meal that was healthy and also satisfying.
